Extremely juicy Tri-Tip cooked Sous Vide style and then seared. Served with chimichurri on the side.

Take out of the refrigerator an hour before heating and place on the counter, to bring to room temperature. Heat for 4-5 minutes in a 420ºF preheated oven. Slice thinly against the grain and serve with chimichurri sauce on the side.
